Pancit Canton - A Recipe for long life


Pancit is one of the well-known and loved noodle dish in the Philippines. It is usually served during birthday parties and is referred as "birthday noodles" since it is believed that eating pancit will give you a longer and healthier life. This dish was influenced by Chinese merchants way before the Spanish Colonization, thus the name "Pancit" came from the Chinese word "pian i sit" which means "conventional food".

This noodle dish is made by sauteing some garlic, onion, various vegetables, meat (optional). Then add the sauce and some water or broth of your choice, and of course the noodles. Mix them all up, and you'll have a colorful dish with an amazing mix of flavors.

Pancit Canton Recipe:

Serving size: 3-4 persons

Ingredients: 250 grams of Egg noodles (Pancit canton noodles) 3 cloves of garlic 1 medium size onion 3 string beans 1 medium size carrot 1 cup cabbage (any type will do) 8 pieces of Kikiam, sliced (optional) 50 -100 grams of Chicken strips (optional) 4 tbsp of water 2 - 3 cups of Chicken Stock 2 tbsp cooking oil

Sauce Ingredients: 3 Tbsp of oyster sauce 2 tbsp of soy sauce 2 - 3 tsp of sugar 1/4 tsp of ground black pepper

Procedure:

Meat and Vegetables:

1. Add Oil in a pan and saute garlic and onions until onions are translucent. 2. Add the chicken strips until slightly brown. 3. Add Kikiam and saute until slightly brown. 4. Toss in the carrots and string beans. 5. Add a little bit of water to help the carrots and beans cook. 6. Pour the Sauce mixture and combine 7. Check if carrots and string beans are nearly done 8. Add the Cabbage, mix well 9. Lastly, Add the Chicken Stock. 10. Simmer for 2-3 mins. 11. Strain out the Meat and vegetables and set aside

Noodles:

1. In the simmer broth add the egg noodles. 2. Cook according to the packaging, or until noodles are soft. 3. Mix in the Meat and Vegetables which you have set aside.
